February 9 - Imperial Court at MGM MACAU Garners Black Pearl Restaurant Guide One-Diamond Award

[Thursday, February 9] MGM is honored to announce that its restaurant Imperial Court at MGM MACAU has been awarded the rating of One-diamond from Black Pearl Restaurant Guide 2023. The accolade recognizes MGM’s distinguished culinary expertise and the Company’s contributions in strengthening Macau’s positioning as the UNESCO Creative City of Gastronomy. Meanwhile, the award serves as a milestone for the restaurant’s inheritance and innovation of Lingnan cuisine in the Chinese dining landscape.

Reveals the Essence of Lingnan Culinary Culture

Imperial Court, helmed by Chef de Cuisine Homan Tsui, serves enticing Cantonese dining traditions with a modern twist. With over 20 years of experience in the culinary industry, Chef Homan has developed his own definition of Lingnan cuisine which includes dishes from the general regions of Guangdong, Guangxi, Hainan, Hong Kong, and Macau, as well as flavors from Chaozhou and Hakka.

The essence of Lingnan culinary culture, which are seasonality, balanced seasoning and focus on the original flavors of ingredients, inspire Chef Homan to cook with a full range of culinary methods, including “quick” stir-frying that highlights the crispness of seasonal vegetables and “slow” stewing that transforms poultry into tender, delectable bites. While paying full respect to Lingnan traditions, Chef Homan also values creativity in his practice, which pushes him to continue expanding horizons of gastronomy enthusiasts while at the same time keeping pace with the contemporary dining scene.

Black Pearl Degustation Menu

In celebration of this proud achievement, Imperial Court introduces a special Black Pearl Degustation Menu, which features a lineup of the restaurant’s signature dishes that pay tributes to the delightful gem of authentic Lingnan culinary culture, to all epicures.

Highlights of the menu include Crispy fried chicken skin with shrimp mousse and salted fish flakes, a Lingnan handcrafted classic well-known as the “deconstructed chicken”, which is reinvented by Chef Homan to a whole new level at Imperial Court. Swapping steamed chicken skin to crunchy crispy-fried top shell offsets the shrimp mousse made of three types of shrimps – Japanese Obsiblue prawn, Vietnamese white shrimp and Kuruma prawn from Pearl River Delta Region, a thoughtful combination that gives the shrimp mousse an al dente texture and a vivid taste profile full of sweetness and umami. Finishing the refined creation with freeze-dried salted fish flakes, a specialty ingredient unique to Macau, to enrich the overall palate, this contrasting yet heavenly balanced delicacy is bespoken for Lingnan gastronomy. Moreover, its net-inspired plating also pays homage to the historic past of Macau as a fishing village.

Another nostalgic Cantonese dish on the menu, Braised partridge porridge with bird’s nest and Yunnan ham, was a porridge-like soup dish commonly served for children and elderly back in the days. The hearty broth concentrates the essence of the partridge in the form of slow cook, while the texture is further enhanced by the starchiness from the yam and the nutritious minced breast, complete with a delicate touch of bird’s nest on top. Other highlights include the Tossed handmade shrimp roe egg noodles with shredded sea cucumber and barbecued pork and more, which exemplify the core of Chef Homan’s culinary philosophy – adorning traditional Lingnan gastronomy with creative use of premium ingredients.
