Hiroyuki Sato, chef of sushi restaurant Hakkoku in Tokyo’s Ginza, previously known as the chef of a 1 Michelin star sushi restaurant in Tokyo’s Ginza district elevates the craft of sushi into an artform. Lauded as a culinary innovator, rice is at the heart of Sato’s sushi – every grain is infused with his iconic akazu seasoning composed of two different red vinegars that produce a ruby shine and deeply aromatic flavour. This unique rice always takes centre stage, even above the fish, so that every flavour chosen to the top each bed of shari (sushi rice) is a complement its salty, sweet vinegar taste. Sato’s attention to detail means that each piece of nigiri is an expression of his constant desire to create sushi perfection.
