June 30 - MGM and Diaoyutai MGM Hospitality Jointly Present ‘Star Chefs Discovery Journey’ Gastronomic Event

[June 30, Macau] MGM joins hands with its sister group in Mainland China – Diaoyutai MGM Hospitality to present the third “Star Chefs Discovery Journey” gastronomic event. A lineup of seven stellar chefs from the two hospitality brands were invited to flaunt culinary artistry across several cities in Mainland China and Macau. Together they integrated regional cuisines with art, creating a sensational extravaganza of gastronomy that celebrates both traditions and innovations.

Seven Star Chefs Exploring “Boundless Art of Gastronomy”

The third “Star Chefs Discovery Journey” took place in June across three cities of Macau, Qingdao and Shanghai respectively. With the joint venture of chefs from MGM COTAI, Diaoyutai Qingdao, MGM Qingdao, Shanghai Bellagio Hotel, Shanghai West Bund, Diaoyutai Boutique Hotel Chengdu and MGM Grand Sanya, together they have curated an epic extravaganza under the theme of “Art of Gastronomy”. In addition, the Macau stop of “Star Chefs Discovery Journey” has exclusively invited Chef Lam Chan Kuok, a local culinary master who is also well-known even in culinary industries of Hong Kong and Mainland China, joining forces with the lineup of star chefs.

Past and Present of the East-meets-West Macau

On June 20, “Star Chefs Discovery Journey” made its first debut in Macau, a city that lives with a unique, centuries-old East-meets-West culture as the first stop of the event this year. This extraordinary dinner banquet took place in The Mansion of MGM COTAI, an ultra-exclusive resort within a resort available only to the most privileged guests. Inside the Moorish-inspired architectural style conservatory, an assimilation of both Portuguese and North African cultures, lush greenery, sparkling fountains, and immaculate landscape, and led to an escape into a whole different world, which is a scene that echoes the historical gems in Macau, enabling guests to truly immerse into the allure of East-meets-West culture. Inside this extraordinary space, the banquet has especially incorporated a set of ceremonious catering services that pay tribute to the traditional courtesies of Chinese state banquet, showcasing the beauty of oriental sophistication to the prestigious guests.

The seven chefs have tailormade a 10-course dinner menu exclusively for “Star Chefs Discovery Journey”. With exquisite craftsmanship, every dish was designed and created into a piece of exquisite edible art that integrated the tradition and specialties of different reginal Chinese cuisines, which perfectly reveals the alluring diversity of Chinese culture.

With over three decades of culinary experience, Chef Tam Yim Chan, Executive Sous Chef helming Chún at MGM COTAI, is best known for his culinary creation that is both traditional and innovative, injected with “Wok Chi (energy of the wok)”, the essence of Cantonese cuisine. In the event, Chef Tam has created the Pan-fried Fish Maw with Conpoy, Bean Sprout and Egg, a traditional hand-crafted dish with a contemporary twist. Best demonstrating his impeccable skill of utilizing “Wok Chi”, Chef Tam quickly stirs fried egg and fish maw on the sizzing wok to fuse the heavenly aroma of both worlds, giving the dish a piquant yet delicate taste to savor.

Local culinary master Chef Lam Chan Kuok has co-created a dish together with MGM’s Chinese Executive Chef Louie Vong – Steam Mud Crab with Glass Noodles in Hua Diao Rice Wine. Chef Lam selects the finest seasonal mud crabs from the Pearl River Delta Region, hand-picks the meat and extracts the roe, then steamed with the 20-year Nu'er Hong Hua Diao rice wine to accentuate the freshness from the sea. Complementing the umami goodness is the creatively handmade glass noodles infused with red dragon fruit juice, which is steamed to perfect in order to absorb all of the rich broth from the crab with Hua Diao wine.

The abovementioned two dishes created by local Macau chefs will be served in Chún at MGM COTAI to further flaunt the charm of hand-crafted Cantonese delicacies in “Star Chefs Discovery Journey” to locals and tourists, from now until August 31.
