June 27 - MGM Welcomes Summer with Delicacies of Lotus

[June 27, Macau] As the city welcomes the season of blossoming lotus, it is also the best time to savor the delights of this edible plant. This summer, Imperial Court at MGM MACAU and Chún and MGM COTAI are serving a lineup of Lingnan delicacies with lotus, a hearty and nutritious ingredient that best represents the season. Guests are invited to indulge the exquisite seasonal Lingnan flair in Macau, mutually known as the City of Lotus, with families and friends under the vivid and lively summer breeze.

Lotus Seed Set Menu at Imperial Court

“Black Pearl Restaurant Guide” One-Diamond Restaurant Imperial Court launches the six-course “Summer Vibe – Lotus Seed Set Menu”, a tasting menu tailormade for the season. With over 20 years of culinary experience and incredible expertise in ingredients from the Lingnan regions, Homan Tsui, Chef de Cuisine of the restaurant delivers the true essence of Lingnan cuisine with delicacies made with the freshest lotus seed. It is truly a seasonal treat that comes along with numerous health benefits, such as detox and soothing.

Stewed sea cucumber with Nepalese rock rice and fresh lotus seed is a sumptuous and nourishing indulgence – Chef Homan first soaks the organic rock rice that comes with natural grain aroma in a slow-cooked, flavorful broth of ham and chicken, which pairs wonder with the thoughtful selection of Japanese sea cucumber and fresh lotus seed. Another highlight of the tasting menu is the Braised lotus seed soup with snow petrel, crab meat and spinach, a hand-crafted soup dish that best showcases the extraordinary knife skills of the chef. It is mixed with a jade-colored soup base of blended spinach and a snowy-white soup with braised fresh lotus seed puree. The hand-picked crab meat and thinly sliced silky tofu, making every sip of the soup extremely silky, smooth and delicate to savor. Concludes the tasting journey with a refreshing tea, Phoenix Dancong with licorice and lotus plumule, a soothing drink to calm the summer heat from within.

Seasonal Nourishing Delights at Chun

Chef Tam Yim Chan, Executive Sous Chef helming Chún designed a lineup of seasonal dishes of summer delights with lotus, paying tribute to the traditional Lingnan culinary culture, under the world record glass roof of the Spectacle with ample natural sunlight. Highlighted dishes include a summer staple in Guangdong region, the plentiful Eight treasure winter melon soup, with fresh lotus seed, roasted goose, mushroom, crab meat, dried scallop, ham and Tonkin jasmine. Such generous array of goodness is sealed and steamed inside a winter melon, which makes a comforting soup that emphasizes sweetness and freshness of the seafood and vegetables. The Steamed fish wrapped in lotus leaves, on the other hand, features the freshest catch of lion croaker from the Pearl River Delta area. Unboned with Chef Tam’s incredible knife work, the tender and delicate fish meat is steamed with the aromatic lotus leaves, exaggerating the irresistible umami of the fish to a whole new level. Pair the delicacies with a selection of tea master’s recommended wellness tea to complete the dining experience.
