June 20 - MGM Presents Nordic-Japanese Inspired Cuisine Koji-delic Pop-up to Macau

[June 20, 2023, Macau] Dedicated to enlivening the gastronomic landscape in Macau, MGM is once again bringing new spark to the local dining scene by introducing an international young culinary talent to the city – Chef Peter Kasamvilas of Koji-delic, a Thai chef who is also the youngest Finalist of MasterChef Thailand, is invited to present his innovative Nordic-Japanese inspired cuisine at a three-day-only pop-up at MGM COTAI from July 7 to 9. The emerging culinary talent will enthrall gastronomic enthusiasts in Macau with an 8-course tasting menu that best represents his ingredient-focus culinary philosophy. On top of that, Chef Kasamvilas will also join hands with the Beverage Team of Bar Patua of MGM COTAI, to present a lineup of East-meets-West-inspired cocktails to complete the dining experience. This lineup is one of many to come in support of Macau’s position as a “Creative City of Gastronomy".

Born and raised in Bangkok, Thailand, the 21-year-old Chef Peter Kasamvilas has studied in Hong Kong, Canada, prior to receiving professional culinary education from Le Cordon Bleu in Bangkok, where his professional career began. At age of 19, Chef Kasamvilas made his appearance on the competitive cooking reality television series MasterChef Thailand Season 4, where he was the youngest contestant and eventually became one of the finalists in the show.

Last year, Chef Kasamvilas established Koji-delic in Bangkok – a contemporary Nordic-Japanese inspired “food lab” that focuses on locality and sustainability with a Nordic approach, where up to 90% of ingredients are sourced in Thailand. The name Koji comes after a fungus used for various culinary purposes such as sake, miso, soy sauce, mirin, and much more. Known as the "magic mold", koji is responsible for breaking down starches and proteins into sugars and amino acids in fermentation, which the process best describes Koji-delic’s vision of altering local ingredients into lively and intriguing dining experience with unique flavors.

The ingredient-focus 8-course tasting menu served in the three-day event at MGM COTAI is curated to pay tribute to both innovative Nordic-Japanese cuisine as well as Asian culinary culture with contemporary flair. One of the dishes best reflects his culinary practice is the Giant Trevally, a fish tartare dish featuring a fresh catch from Phuket. Fished with the “ikejime” method invented by Japanese fisherman, it gives the fish a delicate, firm texture and clean taste. Chef Kasamvilas accentuates such taste of freshness with pickled apple, kombu cream, and dill oil to make it an exhilarating start of the tasting journey. What is more, the Beverage Team from Bar Patua will present his East-meets-West-inspired creative mixology to complement with the menu.
