June 16 - MGM Showcases the Diversity of Chinese Culinary Art Through Five-Star Craftsmanship

[Thursday, June 16] MGM’s two newly rated Forbes 5-star restaurants, Imperial Court and Five Foot Road, are well-known as the institutions of quintessential Lingnan culinary and Chengdu-Sichuan delights with menus that showcase innovation paired with meticulous craftsmanship, which gourmands can’t miss. This summer, Chef de Cuisine Homan Tsui of Imperial Court and Chef de Cuisine Yang Dengquan of Five Foot Road welcome guests to relish a time-limited menu at the respective restaurants to experience age-old delicacies reinterpreted through five-star curation.

Imperial Court

Nestled in MGM MACAU’s VIP Lobby, Imperial Court is where Chef Homan greets guests with his twist on conventional Lingnan favorites. Evolving from the ancient Tang dynasty, Lingnan cuisine is characterized by the culinary traditions and flavors that encompass the twin provinces of Guangdong and Guangxi, as well as the Hainan region and the Hakka culture.

Chef Homan explained, “Freshness and seasonality are what makes Lingnan cuisine stands out from the diverse list of Chinese cuisines. My dishes stay true to the authenticity and classic culinary skills, without losing the spark of innovation”. One of his emblematic dishes, Crispy-fried chicken skin stuffed with shrimp mousse from his a-la-carte menu, reflects his belief and immense craftsmanship by layering the delicate chicken skin atop the shrimp mousse. The crispy, succulent crustacean is then topped with a shaving of Chef Homan’s very own version of deconstructed salted fish fillet (sous-vide then freeze-dried). This is crafted to pay tribute to the history of Macau as the main fishing port of China.

From now until August, Chef Homan introduces “Lingnan Culture: Hainan Shunde Cuisine” menu, featuring eight seasonal and appetizing delights only available in the summer. One of its highlights, Steamed sustainable sliced abalone with preserved meat, is served with a unique ingredient – a crystal clear hand-grated lotus root starch extract which has a consistency similar to rice rolls. The sweetness of the shellfish is further accentuated when steamed, with its juice being soaked up by the mild-taste lotus root starch extract. The hearty Crispy fried crab meat, sea urchin stuffed pastries, along with other gems on the menu are sure to impress discerning palates.

Five Food Road

A time capsule of old Chengdu in MGM COTAI, Five Foot Road is where Chef Yang Dengquan flaunts the upscale Chengdu flavors, through his expertise and techniques from over 35 years of experience across various Sichuan restaurants across China.

Under the diversified 24-taste-profiles, Chef Yang emphasizes, “Sichuan cuisine illustrates the beauty of inclusiveness, which is beyond the fiery and hot that the public’s perception falls into. I am determined to bring the most authentic flavors through my dishes, to pass on this treasure, which sometimes requires specific ingredients sourced from different areas of Sichuan to deliver flavors in its truest form.”

From now until August, Chef Yang takes guests on a multi-sensory discovery journey back to the old Chengdu, once referred to as Rongcheng in ancient times. The exquisite 8-course tasting menu features a sumptuous range of nine different flavors from the 24-taste-profile. The menu includes the restaurant’s signature dish – Stewed fresh matsutake mushroom with minced chicken and egg white in bouillon and Braised deer tendon with baby scallion under the “savory” profile, while the Wok-fried giant garoupa fillet with dried chill and peppercorn and Tossed giant razor clam with stir-fried green chili presents two different types of “spiciness” from the taste profiles. The experience is elevated with a tea-pairing of three varieties of premium teas, including Eight Treasure Tea which is served by a glamourous Sichuan tea dance with a long-spouted copper kettle; the rare Ya'an Tibetan Tea from the main region of the Southern Silk Road, as well as the stunning Golden Silk Chrysanthemum Tea to pair with Sichuanese comfort food. The teas are exquisitely prepared with glacial water from the high mountain ranges in Sichuan or Spring water from Mount Wuyi. This limited 8-course Rongcheng Tasting Menu is priced at MOP1,060* per person, and MOP880* per person, without tea pairing.
